Our Story

A passion for wood fire cooking and the best ingredients we could source was the ethos surrounding the creation of The Brisket Brothers.

Created in 2022 we started smoking our own brisket and pork in our imported wood fired smoker. Using pronominally oak, the meats are smoked for roughly 14 hours and then pulled before being served on Marks Cotswolds Bakery semi brioche buns or topping our Tubby Toms seasoned fries.

We have a great deal of pride in using Huntsham Farm Longhorn Beef mince for our burgers. Having visited Richard and his team after our initial trial, we were convinced we couldn’t find a better supplier for our burger mince. Each burger is cooked to order “smashed” on our plancha grill, seasoned then topped with American cheese and steamed for the perfect, juicy finish.

Making our own pickles, sauces, and mayonnaises we believe finishes off the attention to detail we put into our menu. We won’t compromise on any of our ingredients.

Our horsebox pizza trailer has a regular Thursday night pitch at Hallow in Worcester, and is a fantastic addition to any festival, wedding or private party - serving up to 150 fresh pizzas in an evening.
